Bacon-Corn Chowder with Chicken

4 slices Low Sodium Bacon 1 cup of Onion, chopped1/2 cup Celery, chopped1 tsp. thyme1 garlic clove, minced4 cups frozen corn 2 cups nonfat Evaporated milk1 tbsp black pepper2 chicken breast
1. Cook Chicken
2. Heat a large pot over medium-high heat. Add bacon to pan; saute 4 minutes or until the bacon begins to brown. Add onion, thyme, garlic and celery to pan, and cook for about 2 mintues. Add corn and cook for another 2 minutes, stir occasionally. Add broth, bring to a boil and cook for about another 4 minutes.
3. Place 2 cups of corn mixture in a blender lid. Blend until smooth, return to pan. Stir in pre-cooked chicken. Stir in evaporated milk, pepper. You can add salt to taste.
Serving Size: Makes 4; 1 2/3 cups servings
