Sweet Potato and Bean Soup

2 tsp olive oil1 large sweet potato, peeled and cubed1 29oz can of black beans, rinsed and drained1 29oz can of red kidney beans, rinsed and drained3 garlic cloves1 Tbl Curry powder6 cups vegetable broth1/4 cup plain, fat free, Greek yogurt2 Tbl cilantroZest of half a lime
Stir all ingredients except for cilantro, yogurt and lime zest into crock pot. Cook on high for 4-5 hours or low for 8-10 hours.
Meanwhile mix yogurt, lime zest and cilantro together.
When finished purée in batches. Serve with a tablespoon of the yogurt mix on top of each bowl.
