Potato Corn Chowder w Ham

8 cups chicken broth3/4 lb. cubed smoked ham2 small yellow onions finely chopped1/2 red bell pepper finely chopped4 med. white potatoes peeled & diced3 c. frozen corn1 can of whole kernal corn1 1/2 tsp. table salt1/4 tsp. cayeene pepper1 cup 2% milk12 oz. can of fat free evaporated milk 1 4 oz. can chopped green chilis1/4 cup cornstarch
Simmer onion, bell pepper, and diced potatoes in chicken stock until tender. Add the corn, ham, salt and cayeene and simmer for an additional 10 minutes. Mix the cornstarch and 2% milk together. Turn up heat on soup pot til mixture bubbles. Slowly pour milk/cornstarch mixture into pot to thicken slightly. Add green chilies and evaporated milk and simmer slightly more. Turn heat off and allow to rest for 10 - 15 min. for flavors to blend.
