2 cups cauliflower2 eggs1 cup shredded sharp cheddar (non-fat)1 tbsp kosher salt1 tsp cayenne pepper
Rice cauliflower with food processor or cheese grater and cook in the microwave for 8 minutes (no need to add water, just stick it in the microwave as-is). Once cooked, add eggs, salt, pepper, and cheese and incorporate.
Heat olive oil in non-stick pan and make patties with mixture. Cook 3 minutes each side.
