Chunky Chai Applesauce

Ingredients
30 apples (mixed brands)2 cups apple juice3 tbsp lemon juice3 tbsp cinnamon5/8 tsp nutmeg5/8 tsp ginger5/8 tsp cardamon1/8 tsp ground cloves1/8 tsp fresh ground pepper
Directions
Peel, core and dice all apples
Add to large pot with lemon and apple juice
Bring to boil, then simmer, covered for 20 minutes
Add spices
Simmer an additional 15 minutes
