Garbanzo Bean Salad

Ingredients
1 C garbos cooked (i used my pressure cooker, but be sure to soak over night before cooking)1 large potato , boiled, cubed med piecescilantro 1 tbsp, chopped fine2 roma tomato (any small tomato will do) lemon (half a med lemon squeezed)lemon rind (pare the rind from half the squeezed wedge and dice very small for yellow accent)serrano pepper, only abt a 1 to 1-1/2" piece (1/4 bell pepper is okay, so is 1 jalapeno, any pepper in quantities as desired)cumin powder to tastefajita seasoning as desired (or garlic, onion, salt pepper)
Directions
combine:
cooked garbanzos
diced potato
finely chopped cilantro
diced tomato
lemon juice
lemon rind
chopped peppers
cumin
fajita seasonings
refrigerate overnight
serve at room temperature


Serving Size: makes 2 servings as a side or 1 as the main lunch item
