Turkey Taco Pasta Skillet

1.25 Lb Ground Turkey1/2 Medium Onion1 14oz can diced tomatoes2 1/2 cups chicken broth1 lb rotini pasta1 package taco seasoning1/2 cup shredded cheddar cheese1 tbsp EVOO
heat 1 tbsp EVOO in large skillet on medium-high heat. Once hot, but not smoking, add diced onion (and 1/2 tsp salt if desired). Cook for 4-5 minutes or until onions turn translucent. Add the ground turkey and package of taco seasoning. Cook until turkey is no longer pink. Add can of diced tomatoes and combine. Add uncooked rotini pasta, cover with broth and combine. Bring to a boil, stirring occasionally, cover with lid and turn to low heat. Cook covered for 9-10 minutes, stirring occasionally, until pasta is done. Add cheddar cheese and combine. Ready to serve!
