Carrot Cake- gluten free in the crockpot

Ingredients
Dry ingredients1/2 tsp xanthan gum1/2 c flax meal1 1/2 c gluten-free flour1/4 tsp salt2 tsp baking powder3/4 tsp baking soda1 tsp cinnamon1/4 tsp allspice1/4 tsp cloves3/4 c brown sugarWet ingredients2 eggs1/4 c canola oil1/4 c waterStir-ins1 c grated carrots1/2 c raisins1/2 c chopped walnuts
Directions
Mix dry ingredients together.
Mix wet ingredients together and add to dry.
Mix.
Stir in carrots, nuts and raisins.
Put batter in greased can , cover, set on rack in crockpot.
Add 2 c hot water.
Cook on high for 3 hours
