Moroccan Carrots

Ingredients
3 cups carrots, cut however you like1 Tbsp olive oil1 Tbsp lemon juice1/2 Tbsp cuminSmall handful of parsley, choppedSalt & Pepper
Directions
Steam or boil carrots until desired firmness. (I like my carrots fairly soft, but not fall apart.) Drain carrots and transfer to a non-reactive bowl. Combine all ingredients and let sit for 3 hours. Serve cold or at room temperature.
