Colorful Black-eyed Peas and Greens

Ingredients
1 can black-eyed peas1 cup ham1 bunch fresh kale or other greens, coarsely chopped and stems removed if needed1 small red onion, diced1 cup diced celery (1 or 2 stalks)1 cup diced red pepper (1 medium)1 small can tomato sauce1 heaping teaspoon garlic1 large sweet potato, chunked1 jalapeno (seeded for less heat)
Directions
Saute ham (leftovers are great for this) to liquify some fat (or use olive oil), then add onion, celery, garlic and sweet red pepper. Cook until onion and garlic translucent. Meanwhile, microwave sweet potato if short on time, then remove skin and cut into large chunks. Add kale or other greens, sauteing briefly to reduce volume, then add tomato sauce and jalapeno and cover. Reduce heat to low and cook for at least 20 minutes (or until greens sufficiently soft). Makes 4 servings. Serve with cornbread or brown rice and a salad for a simple supper, or as a side dish to a holiday feast.
