New Years Lucky Sauerkraut Casserole

3 1/3 cup prepared instant mashed potatoes - prepared per package directions with butter, salt, milk and water.1 - 27oz can of sauerkraut - drained1lb of breakfast sausage cooked - (the kind that comes in a chub)2 cups shredded cheddar cheese
Cook instant mashed potatoes per package directions (ours called for butter, salt, milk and water and i did not put these individually into the ingredient checker as i used the settings for prepared instant mashed potatoes, i figured it counted that in already)
Set potatoes aside.
Cook the 1 lb chub of sausage in a pan, scramble it up so it looks like ground meat should. Drain fat off to cut back (did not count the draining in as there was not setting for it, i also like to rinse the oil off the meat in a collander but my grama refuses to do this so hey its a once a year treat). Set aside.
Drain sauerkraut in a collader and allow liquid to fully drain.
To assemble the casserole take a round casserole dish or regular baking pan whichever you prefer but serving size is measured using a round bowl style baking dish. Place sausage in bottom, then layer on the kraut, then place cooked potatoes on top. Bake at 350 for 20-30 minutes, checking every ten minutes to make sure it doenst burn. During the last 5-10 minutes take out and put the cheese on and put back into oven to let melt.
I use a knife to score the potatoes into 8 sections to let people measure their portions. This is very good. It makes 8 servings as I stated so you have to eyeball them. I like to serve this with black eyed peas and greens.
