Grandma's Old Fashioned Gingerbread

Ingredients
2 1/4 C Packed Brown Sugar1/2 C Shortening1/3 Fluid Dram of Cinnamon Oil4 Large Egg (Reserve 2 Egg Whites)1.5 oz Ground Ginger1/4 C Oil1/2 C Skim Milk6 C Self Rising Flour1/4 C Granulated Sugar
Directions
Mix brown sugar and shortening well
Add ginger, cinnamon oil, eggs and cooking oil
Mix until smooth
Add milk slowly
Add 5 C flour, mixing with hands or dough hooks
Knead dough in remaining 1 C flour
Pat dough into cakes appx 2 inches in diameter
Bake on a greased cookie sheet for 8 minutes or until lightly browned
Beat 2 egg whites you reserved and brush tops of gingerbread, then sprinkle on granulated sugar.

Makes approximately 3 dozen cookies
