Spicy Chicken tagine w/apricots,rosemary and ginger

2 Tbsp olive oil1 onion finely chopped3 fresh sprigs rosemary,(1 finely chopped 2 with whole leaves)1 1/2 inch ginger root peeled,finely chopped .2 fresh red chiles de seeded and chopped1-2-cinnamon sticks5 oz dried apricots2 Tbsp fine honey2 cups chopped tomato (pome brand) less sodiumsea salt and freshly ground pepper (1/4 tsp each or to taste01 small bunchf resh basil leaves
add 2 tbsp oil to large cooking pan, add onion ginger chopped rosemary and chopped chiles,sautee until soft,
add the chicken and brown on all sidesadd rosemary leaves and cinnamon sticks. Toss in the apricots with the
honey,then stir in the tomatoes and add water if needed to cover apricots,toss in the whole garlic cloves,
Reduce heat cover and simmer until chicken is done
35-40 minutes.
season with salt and pepper .shred larger basil leaves , leave smaller ones whole,sprinkle over dish and serve
with pasta , rice or couscous.
