Sweet and Savory Quinoa with Craisins

1 cup turkey stock 1/2 cup quinoa100 calorie pack craisins1/2 TBS fresh parsley, diced1 tsp dried rosemary 3/4 tsp dried sage1 TBS olive oil1/4 cup yellow onion, chopped1/4 cup celery, chopped1/4 tsp crushed garlic1/8 tsp onion saltpinch of garlic saltOptional add in: mushrooms
In a small sauce pot, heat olive oil and add onions. Cook until almost translucent and add the garlic and celery (and mushrooms here if desired). Cook for another min. Remove from heat.
Add parsley, rosemary, sage, and craisins. Mix together. Add quinoa and stock, mix, and bring to a boil. Once boiling, reduce to a simmer and cover for 10-15 min (until water has evaporated).
Uncover, fluff with fork, season with salt and mix. Serve.
Serving Size: Makes 3 Servings
