Red Velvet Muffins

Ingredients
3 Tbsp. melted butter6 tbsp. packed brown sugar6 tbsp. white sugar1 large egg1 tsp. vanilla1/2 cup Fibre One Cereal1/2 cup whole wheat pastry flour2 tbsp. coconut flour2 tbsp. oat bran2 tbsp. cocoa1/2 tsp. baking powder1/2 tsp. baking soda1/4 tsp. salt3/4 cup buttermilk1 cup finely grated beets2 tsp. vinegarCream Cheese centre:1 8oz. package light cream cheese1/4 cup sugar1 large egg1/2 tsp. vanilla1/8 tsp. salt
Directions
Combine all the first ingredients together until just blended. Spray a 12 muffin tin with cooking spray and divide the batter into all 12 muffin cups. Combine the cream cheese centre ingredients and add a tbsp. intot he centre of each muffin. Bake at 350F for 20 min. or until lightly browned and set in the middle.
