Noodle kugel

Ingredients
4 Eggs1 lb Egg Noodles, enriched1 cup Milk, nonfat 1 cup Yogurt, plain, low fat1 cup Cottage cheese, 2% milkfat1 8 oz box Cream Cheese 1 cup Granulated Sugar1.5 chopped Apples (peeled and cored first)1/4 stick Butter, unsalted - divided into two partsGround cinnamon
Directions
Makes 21 servings (approx. 3 x 2 inch squares - just cut into three columns by 7 rows, and you have 21 pieces)

Cook noodles according to package instructions. Drain, rinse with cold water to cool.

Use half of the butter to coat the baking pan (9 x 12 nonstick pan, but still needs the little bit of butter). Using an electric mixer, mix the eggs, milk, yogurt, cottage cheese, cream cheese until smooth and creamy in texture. Add the sugar, mix some more. Stir in the chopped apples. Mix in the cooled noodles.

Pour into the buttered baking pan. Sprinkle cinnamon on top. Dot with butter. (Just tiny bits, but it makes it brown better.)

Bake at 350 F for 90 minutes.

Delicious hot, cold, or room temp. Freezes well for reheating later. Makes a LOT so it's great for company, potlucks, or picnics. I love this for a brunch party dish.
