Cranberry-Banana Bread

3/4 cup all-purpose flower3/4 cup whole wheat pastry flour1 1/4 tsp. baking powder1/2 tsp. baking soda1 cup cranberries, chopped1 1/2 very ripe large bananas, mashed1/2 cup granulated sugar1/3 cup vegetable oil1 large egg1 tsp. vanilla extract
Preheat oven to 350 degrees F. Spray an 8" square baking pan with nonstick cooking spray. In medium bowl, stir flours, baking powder, and baking soda. Stir in cranberries.
In another bowl, whisk remaining ingredients until smooth. Stir dry ingredients into banana mixture just until blended. Scrape evenly into prepared pan. Bake 35 minutes, until toothpick inserted in center comes out clean. Let cool completely on rack before cutting into 16 squares.
(Can be made in muffin tin. Makes 16 muffins.)
