Vegan Lo Mein with Vegetarian Roast chunks

2c water2T vegetable stock powder1T minced garlic1T minced ginger600g bag stir fry veggies1c fresh chopped broccoli120g (4.23oz) angel hair pasta1/4c soy sauce2T cornstarch (cornflour)1/2 Sanitarium veggie roast (or 240g/8.46 oz other chicken style vegan meat substitute)
Put the 2c water, vegetable stock powder, garlic and ginger on to boil. Heat wok sprayed lightly with cooking spray, add stir fry veggies and chopped broccoli. When water boils, add angel hair pasta and cook until done (2-6 minutes) then use a slotted spoon to remove pasta - set aside and keep warm. Mix soy sauce and cornstarch and whisk well, then stir into boiling water and seasoning mix that you removed pasta from. Return to a boil and stir for 1 minute or so until thickened. Remove from heat. Keep stirring the veggies so they don't burn. Meanwhile dice the veggie roast and add to the veggies in the wok, stir frying for a minute or two to warm. Add the pasta to the wok, and then the thickened sauce and mix well.
