1 2/3 c. all-purpose flour1 c. granulated sugar1 tbsp. pumpkin pie spice1 tsp. baking soda1/4 tsp. baking powder2 lg. eggs1 c. plain pumpkin (1/2 of 1 lb. can)1/2 c. (1 stick) butter, melted1 c. (6 oz.) chocolate chips1/2 c. pecan pieces
Heat oven to 350 degrees. Grease muffin cups or use paper baking cups. Thoroughly mix flour, sugar, pie spice, baking soda and baking powder in a large bowl. Break eggs into another bowl. Add pumpkin and butter and whisk until well blended. Stir in chocolate chips and pecans. Pour over dry ingredients and fold until dry ingredients are moistened. Pour batter into muffin cups. Bake approximately 25 minutes. Cool on rack. Makes 12 regular muffins.
