Beef Stir Fry

Ingredients
2 oz. bottom round roast in thin strips1 cup chopped broccoli1/4 cup sliced carrots1/4 cup sliced celery1/2 cup beef broth1/2 Tble. soy sauce1/2 Tble. cornstarch1 tsp. vegetable oil
Directions
Spray skillet with cooking spray and saute the beef a couple minutes. Remove and set aside. Put the oil in the skillet along with vegetables and saute a couple minutes. Add the beef back to skillet. Pour in the broth, cover, and simmer for five minutes. Mix the soy sauce and cornstarch together and stir into beef and vegetables just before serving.
