Bison Meatloaf

Ingredients
1 onion, finely chopped1 red pepper, finely chopped3 cloves garlic, minced2 lbs bison meat1 cup ketchup1/2 cup saltines, crushed1 egg white1 tsp Worcestershire sauce2 tbsp mustard (Dijon or yellow)1/4 tsp salt1/4 tsp pepper
Directions
Preheat oven 400F
Spray fry pan with nonstick spray. Add onions and bell peppers: cook , stirring occasionally. Add garlic, cook 30 seconds more. Remove skillet from heat, cool 5 minutes.

In lg. bowl, mix beef, onion mixture, 1/2 ketchup, bread crumbs, egg white, mustard, Worcestershire sauce, and S/P. Transfer mixture to baking sheet or loaf pan. Bake until 160F (45-60 minutes) . Transfer the meatloaf to a cutting board and let stand 10 minutes. Cut into 8 slices.

    Excellent! Thank you. I substituted the 1/2 cup ketchup that gets mixed in for 1/2 cup of applesauce just to reduce the processed sugar. I still smeared the top with ketchup about 15 minutes before it was done. Also subbed oatmeal for saltines. Yummy! - 9/27/13

    Fantastic! My husband's new fav! He didn't even want ketchup on top! But I did add a very thin layer of bacon dressing I had picked up in the mountains. I have also put a very thin layer of "Tastefully Simple's Vidalia Onion Dressing" on top and that was just as good! - 10/19/09
