Red Mill Flax Bran Muffins

Ingredients
1 1/2 C. flour (whole wheat or white)3/4 C. ground flax meal3/4 C. oats (instead of oat bran)1/2 C. brown sugar (not packed)2 tsp baking soda1 tsp baking powder1 tsp cinnamon1 C. raisins1 C. shredded carrots1 apple skinned and shredded1/3 C. chopped walnuts2 Eggs1 tsp vanilla extract3/4 C. milk (whole)
Directions
combine all dry ingredients.
fold in shredded carrots/apples
combine all wet ingredients and add to dry/fruit mixture.
put in prepared muffin pans (lightly sprayed with cooking oil), and back at 350 for 15-20 mins. Mine are usually done by 18 min. Use a knife to poke the middle of the muffin - if it comes out clean the muffins are done.
