1 lb Baby Red Potatoes1 Tbsp Extra-Virgin Olive Oil1/2 Cup Grated Parmesan Cheese1/4 tsp of Sea Salt1 Dash of Black Pepper
Pre-heat oven to 400 degrees. Cut 1 lb of red potatoes into 1-inch pieces. Mix 1 Tbsp Extra-Virgin Olive Oil, 1/2 Cup shredded Parmesan cheese, 1/4 tsp of sea salt and 1 dash of pepper. Coat the potatoes with the mixture and arrange in a roasting pan. Bake for 45 minutes turning once.
