Barley soup

Ingredients
1 T. Unsalted butter1 med. yellow onion, chopped1 cup pearl barley8 cups low-sodium vegetable stock1/2 cup chopped potato1/2 cup chopped carrot1/2 cup chopped celery root1/2 cup celery1 tsp. marjoram, dried2- bratwurst, cut into bite-sized morsels1-slice turkey baconGrated nutmeg, to tasteFreshly ground pepper and salt, to taste1/2 cut chopped parsley
Directions
Heat butter in large stockpot, add chopped onion to soften. Add barley until toasted, about 5 minutes. add stock, vegetables, bratwurst, and spices. Cook for 30 minutes.
