Grandma's Mystery Salad

1 small package sugar-free lemon jello gelatin1 cup water1/2 cup sugar (or splenda)1 can crushed pineapple1 cup shredded cheddar cheese1/2 cup chopped walnuts or pecans1 8-ounce container Cool Whip (lite)
Dissolve Jello in water. Heat pineapple and sugar in a small sauce pan on the stovetop until boiling. Add dissolved jello and combine. Set aside to cool until mixture begins to gel (can cool in the refrigerator). This can take an hour or two.
Once mixture begins to set up, remove from fridge and mix in cool whip, nuts and cheese. Stir to combine, transfer mixture to a serving bowl or dish and refrigerate until set (can make the a day or two ahead of the meal).
Serving Size: Makes 25, 2-ounce servings
