Almond Flax Minute Muffin

.25 cup almond meal or flour2 Tablespoons flax meal.5 Tablespoon sliced almonds2 teaspoons equal or other no calorie sweetenerpinch of salt1/2 to 1 teaspoon of baking powder1 teaspoon vanilla1 large egg2 tablespoons of unsweetened Almond Breeze or liquid of your choice1 teaspoon cinnamon (optional)
Whip it all up in coffee cup sprayed with butter flavor Pam (or any non-stick spray). Microwave uncovered for about 1 minute and 30 seconds depending on your microwave.
Let it cool for a minute and loosen edges with a knife. Flip cup over onto a small plate. Allow to cool for a few minutes and top with sweetened cream cheese or butter if you like. Also good with sliced almonds sprinkled on top.
