Gluten free, grain free cheese buns

1 cup tapioca starch (150 grams)1 teaspoon gf baking powder2 large eggs2 cups shredded Tex Mex cheese
Preheat oven to 350 F.
Whisk together the tapioca starch and baking powder for several minutes. (Cover the mixer bowl with a cloth as the starch will fly).
Stir in eggs. Stir in cheese. This will give a wet sticky dough.
Divide into 10 pieces. (Using a 1/8 measuring scoop makes 12, which will reduce the nutritional info slightly.)
Bake 12 to 14 minutes. Do not brown as that will make them hard. Time will depend on altitude and size of eggs.
