Plaza III Steak Soup

1 stick butter1 c flour8 c water3 c ground beef1 c chopped onion1 c carrots1 c celery2 c frozen mixed vegetables1 can diced tomatoes2 T beef concentrate1 T Accent
Makes 8-2 cup servings
Melt 1 stick butter and whip in 1 cup flour to make a smooth paste. Stir in 8 cups water. Saute 3 c ground beef; drain off grease and add to soup. Add 1 cup each onions, carrots and celery cubed and parboiled before adding. Add 2 cups frozen mixed vegetables, 1 lg can diced tomatoes, 2 T beef concentrate, 1 t black pepper (1T if you like it hot), 1 T Accent.
Bring to a boil - reduce to simmer and cook about 2 hours uncovered until it begins to thicken. Be sure to stir occasionally so it doesn't stick on the bottom.
