Cucumber Chicken Boats

Ingredients
1 medium cucumber, peeled1/2 cup wild rice1/2 chicken breast2 oz plain yogurt, low-fat1 tbsp dried coriander1 tsp ginger1 tsp garlic powder
Directions
Cut the cucumbers lengthwise and remove the seeds. Save the seeds.
Mix the yogurt with the garlic, ginger and coriander leaves. Add the rice, chicken and cucumber seeds. Mix well.
Fill the cucumbers with this mixture.

    I loved this recipe! I Didn't have ginger or coriander, but added onion powder an dill, and used garlic and olive oil cous cous in place of rice.... either way wonderful light recipe, and it served 2!!! Thanks! - 9/24/07
