Texas Twice Baked Potatoes

5 large baking potatoes2 cups shredded reduced-fat cheddar or colby cheese2 cups light sour cream1 pound lean ground beef1 cup chopped, sauteed onions1 tbsp salt1 tbsp pepper1 tbsp Louisiana Hot Sauce
Wash and score potatoes lengthwise. Bake potatoes for 1.5 hours at 400 degrees in oven. 20 minutes before the potatoes finish, brown lean ground beef and drain. Sautee chopped onions and set aside.
When potatoes are ready, slice lengthwise and using a spoon, scoop out the potatoes and put into a large mixing bowl.
Mix in 1 cup of the cheese (set other cup aside), sour cream, ground beef, onions, salt, pepper, and hot sauce. Add more sour cream if potato mixture is not creamy enough. Also, more hot sauce can be added if you prefer more spiciness.
Fill potato shells with mixture, heaping each potato. Top each potato with remaining shredded cheese, return potatoes to 400 degree oven for 20 minutes.
Makes 10 potatoes, enjoy!
