Jennifer's Chicken Quesadillas

1 8in flour tortilla4 oz boneless skinless chicken breast1/2 C Multi Colored Bell peppers (whatever's on sale)Shredded CheeseSalsaSour creamshredded lettucediced tomatoes
Cut chicken and peppers into small pieces and saute with peppers in a pan coated with cooking spray. I play around with seasonings, sometimes just a little salt and pepper usually with a little chili powder, garlic powder and cumin. When chicken is cooked through and peppers are soft remove from heat. Again, spray pan with cooking spray, lay in tortilla spread thin layer of shredded cheese over entire thing, spread chicken and pepper mix over half and fold. I usually set a sauce pan or something heavy on it so that it gets good and crispy. After 1-2 min flip over and cook for an addt'l 1-2 minutes. You know when it's done :) Top with s. cream, salsa, lettuce and tomato.
