Ingredients
1/2 lg. head cauliflower, separated into florets (chop any stems into pieces)1 lb. potatoes, quartered1/2 c. skim milk1/4 c. chicken broth1 T. butter2 scallions, choppedSalt and Pepper to taste.
Directions
Put cauliflower in a microwave safe dish with a lid; cook until soft. Transfer to a blender or food processor, add the milk and chicken broth, and puree until very smooth, about 2 minutes. Meanwhile, place potatoes in a large saucepan and add cold water to cover by about 1-2 inches; bring to a boil, reduce heat and simmer until tender, about 15 minutes. Drain, return to the saucepan. Mash with a potato masher. Add the cauliflower puree, butter, scallions, 1 teaspoon salt, and 1/4 teaspoon pepper. Stir to blend.
