Tuna Loaf

12 ounces water-packed tuna1 T. lemon juice1 cup crushed saltine crackers1.5 cups skim milk1 T. butter2 T. flour 1 large egg, beaten1/2 c. celery
Add lemon juice to tuna. In a glass bowl in a microwave oven, heat milk, flour, and butter in until slightly thickened. Stir into tuna, together with the egg and celery. Bake in a greased baking dish at 350 degrees about 30 minutes.
