Red Velvet Chocolate Chip Cookies

¼ cup butter¼ cup shortening¼ cup sugar2 tbsp red sanding sugar1/3 cup brown sugar1 egg white1 tsp vanilla1 oz Godiva chocolate liqueur½ tsp rice vinegar½ tbsp red food coloring1 cup flour½ cup spelt flour1 tsp baking soda¼ tsp salt1/3 cup Dutch-process cocoa powder1/3 cup miniature chocolate chips
Preheat oven to 375F and line a baking sheet with parchment.
Cream butter, shortening and sugars together until fluffy.
Add egg white, vanilla, liqueur, vinegar and food colouring and beat smooth.
Stir in flours, baking soda, salt and cocoa until just combined. Fold in chocolate chips.
Bake for 11-12 minutes. Cool completely on the sheets.
