Leek and Potato Soup with Ham

1 quart chicken or turkey stock, fat free2 lbs. red potatoes, cubed1 tbs. butter1 1/2 leeks, sliced thin2 tbs. flour7 oz. ham steak, cubed1 c. skim milk1/2 c. cream
Cooked cubed potatoes in stock until tender. You may need to add a little water to cover potatoes.
Saute sliced leeks in butter until soft. Sprinkle with flour and stir until flour cooks for 2 minutes.
Add some stock to the leek mixture and stir. Then add leeks mixture to the potatoes. Add ham to heat. Add milk and cream and heat through.
This makes four large servings of 2 cups each
