Bruschetta with Beans

Ingredients

1 cup of cannelinni beans or pinto beans1 tbsp of scallions1 roma tomato or small tomato1 tsp of cilantro or basil6 medium slices of italian bread
Preheat oven to 350.
Warm up cannelinni beans on stove top or in microwave.
Cut tomatoes and scallions and cilantro or basil. (If you want the tomatoes to be extra juicy you can cut them up and leave them for a little while to sit)
Place cut bread on pan and place in oven for 3-5 minutes then mush cannelinni beans on top of the bread and place back into the oven for 5 minutes or you can broil the topping to make it crispier.
Place cut up tomato mixture on top of bread. And voila!
Serving Size: Makes 6 pieces of bread with beans and tomato topping.
