4 eggs2.5 cup cooked pureed pumpkin.67 cup unsweetened applesauce3 tbsp vegetable oil.5 cup granulated sugar3 cup all purpose flour2 tsp baking soda1 tsp ground cinnamon1 tsp freshly ground nutmeg.25 tsp ground ginger1.5 tsp kosher salt.5 cup cranberries.33 cup chopped pecans.33 cup semisweet chocolate chips
Preheat oven to 350F.
In a large mixing bowl, combine wet ingredients. In a separate bowl, combine dry ingredients. Fold in cranberries, pecans and chocolate chips.
Add baking cups to a regular sized muffin tin. Fill cups nearly to top with batter. Bake at 350F for 15-20 minutes.
