Easy Chicken & Dumplings

Ingredients
3 celery ribs, chopped1 c. sliced, fresh carrots2 cans (14 oz each) chicken broth, 1 can milk1/2 tsp. poultry seasoning1/8 tsp. pepper1 lb. chicken breast, cooked, cubed or shredded 1 2/3 c. reduced-fat biscuit mix2/3 c. 2% milk
Directions
In a Dutch oven coated with cooking spray, saute carrots and celery for 5 minutes. Stir in the broth, 1 can milk, poultry seasoning, and pepper. Bring to a boil. Reduce heat. Simmer, uncovered. Add the chicken.

For dumplings, combine biscuit mix and milk. Drop by Tbsp. into simmering broth. Cover and simmer for 10-15 minutes or until a toothpick inserted into a dumpling comes out clean. (Do not lift cover while simmering).
Serves 4 (about 1 1/2 c. plus 4-5 dumplings each)
