Crustless Quiche Lorraine (Adaptable to Gluten Free)

4 eggs 1 1/3 cups light cream or milk1/2 cup flour (use brown rice flour if adapting to gluten free)1/2 tsp baking powder1/2 tsp salt1/4 tsp dry mustard1/2 tsp lemon zesta couple of dashes of Tabasco sauce (optional)3/4 cup ham, finely minced6 slices bacon, cooked and crumbled1 cup grated Swiss cheese (4 ounces)4 finely sliced green onions, 1/2 of a green pepper, finely diced
Preheat oven to 350 degrees. Mix egg mixture (eggs, cream, flour, baking powder, salt, dry mustard, lemon zest, and Tabasco sauce) and pour 1/2 of the mixture into a lightly greased 10-inch pie plate or quiche dish. Mix ham, bacon, and Swiss cheese and sprinkle evenly over the egg mixture. Pour the remaining egg mixture over the top, and sprinkle green onions and green peppers over the top. Bake at 350 degrees until "crust" is a golden brown and a knife inserted in the center comes out moist, but clean. Remove from oven. Allow to stand about 10 minutes before slice and serving.
