Soy Protein Egg Cups To Go

Ingredients
3 eggs1/4 cup shredded cheddar3 tbsp. milk3 tbsp. diced green chiles1 cup brown rice, cooked1 cup Boca soy protein crumbles1/4 tsp. cumin1/4 tsp. salt1/4 tsp. pepper1/4 tsp. garlic powder
Directions
Preheat oven to 400. Spray jumbo muffin tin with cooking spray. Combine 1 egg, 1/2 cheese and rice and split even between 4 jumbo muffin cup tins. Cook 5-8 minutes or until set and lightly brown. Mix all other ingredients and split evenly into 4 tins on top of rice mixture. Bake 15-20 minutes or until set.
