Ingredients

450 gm hash brown potatoa4 L eggs1 Tbsp skim milk2 oz diced lean ham1/8 sweet red pepper2 Tbsp diced onion.5 C low fat cheddar cheese
Coat 8 muffin tin with cooking spray
Thaw hash brown potatos and press into muffin tins, cook 350 for 10 min.
Meanwhile beat eggsand milk add salt and pepper to taste. Mix in remaining ingredients
Remove hashbrowns from oven and press potatos into bottom and sides of muffin tins with a spoon. Potatos should resemble mini piecrusts. Potatos should cover bottom and sides of tins
Pour 1/4 cup of egg mixture into each tin.
Bake 15-20 minutes or until eggs have set.
remove from oven let sit for 5 min before serving
Once cooled they can be stored in containers and reheated as needed.
