Oven Baked Thai Style Chicken

Ingredients
1/2 Cup Joe's Coating Mix 1/4 Cup Rice Flour 1/2 Cup Egg Beaters or egg whites4 Boneless, Skinless Chicken BreastsSalt/Pepper to taste
Directions
Preheat oven to 350 F
Rinse chicken and pat dry
Season with salt & pepper (optional)
Pass chicken through flour and shake off excess
Pass chicken through egg mixture - shake off excess
Place chicken in crusted crumbs and pat with extra crumbs until well coated. Shake off any excess.
Place on cookie sheet and put in oven.
Cook for 25 minutes
