Sweet Potato Casserole (America's Test Kitchen)

Ingredients
6 cups boiled sweet potato (or 3.5c mashed)1/3c 1% milk2 egg white2 Tbsp brown sugar1/2tsp salt1/2 tsp vanilla1/4 tsp cinnamon or pumpkin pie spice
Directions
Boil sweet potatos for 30 min or until tender. Drain.

In a lg mixing bowl, beat the sweet potatoes, milk, egg whites, brown sugar, salt, and vamilla until smooth. Transfer to a pie plate coated with nonstick spray. Sprinkle with cinnamon. Bake, uncovered, at 350 for 25-30 min or until heated through.
