1 cup quinoa- cooked and cooled1 19 oz can of black beans drained and rinsed2 large ripe avocados1 cup pumpkin seeds (pepitas), toasted1 bunch thinly sliced green onions1/2 cup coarsely chopped cilantro1 cup thinly sliced celery1 can of black olives- drained and rinsed pinch of salt and freshly ground black pepperVINAIGRETTE1/3 cup olive oil1/4 cup lime juice2 garlic cloves-minced1 tablespoon honey2 tablespoons Dijon type mustardpinch of salt and freshly ground black pepper
1. Cook quinoa according to package directions and let cool.
2. Combined cooled quinoa and remaining ingredients. Drizzle with Vinaigrette and toss gently to combine.
