Romanian chicken vegetable stew

Ingredients
canola oil, 2 tbsponion, 1 cup choppedgarlic, 3 cloves mincedskinless, boneless chicken, 12 oz choppedpotatoes, 2 cups choppedeggplant, 1 with peel, choppedzucchini, 3 cups choppedcanned tomatoes with juice, 3 cupssalt, 1 tbsppepper 1 tbsp
Directions
Using a large pot, add oil, chopped onions and minced garlic and saute until onions are tender but not brown. Add chopped chicken and 6 cups water and boil for 10 minutes. Add chopped potatoes and continue to boil for 5 minutes. Add chopped eggplant and zucchini and boil for 5 more minutes. Add canned tomatoes with juice and boil for 3 minutes. Add salt and pepper at the end. Enjoy!
