Ingredients
Oats, 3.5 cupGranulated Sugar, 1 cupCocoa, dry powder, unsweetened, .5 cup Vanilla Extract, 1 tsp Butter, unsalted, 10 tbspRegular Coffee, .25 cup (8 fl oz) Coconut Shredded, 8 tbsp
Directions
In the bowl of a food processor, pulse together the oats, sugar, and cocoa to combine. Add the vanilla and butter and pulse again to mix. Add the coffee and pulse until the mixture has come together. Remove the blade and give the mixture a little stir to ensure everything is evenly distributed. Refrigerate 1 hour.

Place coconut in shallow dish. Roll the chocolate-0at mixture into 1 1/4-inch balls, then roll each in coconut. Refrigerate in airtight container.
