DeeDee's Fried Rice

Ingredients
1.5 cups white rice (cook ahead in a rice cooker)2 tsp peanut oil99 grams onions (chopped)1 large egg97 grams carrots (chopped)20 grams (2 stalks) scallion (finely chopped)2 tsp oyster sauce2 tsp mushroom soy sauce2 Tbsp water
Directions
cook rice ahead of time and let cool

mix soy sauce, oyster sauce, water in a separate bowl
scramble egg in a separate bowl

heat oil in wok
saute onion and carrot
add in rice
pour in sauce mixture
create a well in the center and slowly pour in egg
stir everything together to coat with sauce

garnish with scallion
