2 cups of mashed cauliflower1 large zucchini shredded1 small onion chopped2 eggs¼ cup of matzo mealSalt, pepperCanola oil for frying
Directions
Mash cauliflower
Combine with the rest of the ingredients
Form into patties and fry
Drain on paper towels

    I questioned how these could be so low-calorie using oil so I substituted Pam. They were a little bland, so salt and pepper should be added before eating. I topped these with a little no-cal sour cream and applesauce. A very nice, satisfying simulation of a Chanukah treat. I'd make'em again! - 12/22/11
