Starlight Mint Surprise Cookies

1 cup Sugar (I like Baker's Sugar, which blends better)1/2 cup Brown Sugar, packed3/4 cup Butter or margarine, softened2 Tlb. water2 eggs1 tsp. vanilla extract3 cups all-purpose flour1 tsp. baking soda1/2 tsp. saltAndes chocolate candies (1 per cookie)Walnut or pecan halves
In a large bowl, blend sugars, margarine, water, vanilla and eggs until mixed. Blend in baking soda and salt until well mixed. Add flour slowly and blend well. Cover. Refrigerate at least 2 hours for best handling.
Preheat oven to 300 degrees Fahrenheit. Roll 1 Tlb. of dough and place on cookie sheet. Press an Andes candy down into the dough ball, then shape the dough up around to completely cover the candy. (This is the surprise.) Top the cookie with the walnut or pecan half. Bake at 350 degrees for 7-9 minutes or until golden brown.
