8 oz baby lima beans, dried2 C onions, chopped2 cloves garlic, minced2 tsp. chicken bouillon or 2-14 oz cans low sodium chicken broth2 C cubed cooked lean ham1 C carrots, sliced2 T. parsley, dried1/2 tsp black pepper
1. Place lima beans in large soup kettle, cover with water + 2 inches. Bring to boil for 5 minutes. Cover, shut off heat and let stand for 1 hour. Drain & rinse beans. Discard liquid.
2. Combine all ingredients in soup kettle. Bring to boil; reduce heat, cover and simmer for 1 hour until beans & vegies are tender.
